DAH! Honey-Thyme Lassi Olive Oil Cake

Ingredients:
- 1 cup DAH! Plain Lassi
- 1/3 + 1/4 cup olive oil
- 2/3 cup honey
- 1 tbsp fresh thyme leaves, finely chopped
- 1 1/2 tsp lemon zest, finely grated
- 3 eggs
- 1 1/2 cup all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
Instructions:
- Preheat the oven to 325 F.
- Grease a 9-in round cake pan.
- In a large bowl, whisk together Lassi, honey, thyme, and lemon zest. Add eggs one at a time, beating after each addition. Add flour, baking powder, baking soda, and salt. Mix until batter is mostly smooth — don’t overmix!
- Transfer batter to cake pan. Bake for 40-45 min, until top is lightly browned and a tester comes out clean.
- Let the cake cool on the cooling rack for ~10 min before removing it from the pan. Run a knife around the pan to loosen, then flip cake onto plate and flip back onto rack / serving plate.
