In a large bowl, whisk together Lassi, honey, thyme, and lemon zest. Add eggs one at a time, beating after each addition. Add flour, baking powder, baking soda, and salt. Mix until batter is mostly smooth — don’t overmix!
Transfer batter to cake pan. Bake for 40-45 min, until top is lightly browned and a tester comes out clean.
Let the cake cool on the cooling rack for ~10 min before removing it from the pan. Run a knife around the pan to loosen, then flip cake onto plate and flip back onto rack / serving plate.
